Fun Fact: Pandan is known as the “vanilla” of Southeast Asia. We put it in EVERYTHING. From cakes and cookies, to savoury dishes, and even to flavour our rice!

This fluffy, irresistibly fragrant pandan coconut cake will whisk you off to the flavourful, frenetic food hubs of Malaysia. All you have to do is inhale the roasted coconut and sweet pandan aromas, take a big bite - And let this cake transport your tastebuds to the balmy Asian tropics!

Serving Notes

Best eaten same day

Keep refrigerated if not consuming within 24 hours. Bring back to room temperature before devouring!

Any leftovers can be wrapped in cling film and stored in an airtight container in the fridge for up to 4 days (but personally, the cake is at its best fresh)

Suggested Drink Pairings:

Non-Alcoholic : Enjoy with a tall glass of hot or iced teh tarik (Malaysian milk tea). Alternatively, black tea, coffee, fruit smoothies (particularly those with tropical fruits like mango and pineapple) will also pair nicely

Alcoholic : moscato d’asti, passito, and coconut liqueur or white rum based cocktails (e.g. old Cuban, piña colada)

Selamat makan! (Malay for “Happy eating!”)
